
Saturdays are wonderful for some creative action that teases our senses... you'll love this simple treat. It smells and tastes delicious!
Today I was going to have a beautiful photo of this delicious Banana Raspberry Loaf to inspire you... but between the oven and the bench lies a floor and unfortunately there was a big SPLAT! Can you believe it??? Lucky the floor had been mopped a couple of hours before so most of it was retrievable... (and still delicious, even though it didn't look so hot!)
You'll need:
2 egg whites, lightly beaten
3 large ripe bananas, mashed
1/2 cup brown sugar
1/4 cup coconut oil (I used macadamia oil this week... be creative!)
1 1/2 cups plain flour
1 1/4 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon bicarbonate of soda
1 1/4 cups fresh or frozen raspberries
Preheat oven to 160c and line a loaf tin with baking paper.
Using a large bowl combine egg whites, banana, sugar and oil gently with a wooden spoon.
Sift in flour, baking powder, cinnamon and bicarb of soda and fold until just combined. Fold through raspberries.
Bake for 1 1/4 hours (about 15 mins less in a fan-forced oven - test it!)
Cool 5 minutes in the tin (I forgot this bit, hence the hungry floor!) and turn onto a wire rack.
